Meet the baker
Wassem has a pretty simple rule: if there’s cake on the table, everyone should be able to have a slice.
He’s spent more than 20 years figuring out how to make gluten-free and vegan baking taste like something people actually want, not just the alternative people politely settle for.
His background is in biology, so he approaches baking a little differently. A failed recipe isn’t just a bad batch, it’s a problem to solve. What is the flour doing? Why did the texture change? He doesn’t stop at “good enough.” He figures out what the recipe needs, then keeps refining it until it earns its place.

The Sensible Way
At Sensible, we bake without compromise.
Everything we make is gluten-free and vegan, but that’s only where the story starts. We build every recipe from the ground up, thoughtfully choosing ingredients for flavor, function, nutrition, and texture.
Because gluten-free and vegan baking shouldn’t feel like a substitute for the real thing.
A kitchen with character
The best kitchens are built around people who care. We want our kitchen to be a place where people feel supported, take pride in what they make, and genuinely enjoy working alongside one another.
We invest in young talent, too—giving interns and new bakers the opportunity to learn the craft properly, ask questions, and grow.
